Recipe Background

This recipe for Rotini Pasta Bake is tasty for kids and easy for the cook! Black beans have been added to make this fiber rich and extra filling. I've served this to my kids on one of their sports intensive days when I needed to fill them up before a long game.

Rotini Taco Bake

(Prep Time: 20 minutes. Baking Time: 30 minutes)

1 teaspoon olive oil
1 small onion, diced
2 garlic cloves, minced
1.5 pounds, ground turkey
2 Tablespoons flour
2 teaspoons chili powder
½ teaspoon ground cumin
1 teaspoon salt
1 (15 ounce) can black beans, rinsed well and drained
1 (14.5 ounce) can undrained diced tomatoes
1 cup chicken broth
1 pound rotini pasta (or any medium sized noodles)
2 cups taco Doritos, crushed (measure before crushing)
1 ½ cups shredded cheddar cheese

Cook Pasta according to package directions and drain.
Meanwhile, heat olive oil in a large skillet. Sauté the onions and garlic until tender. Add ground turkey. Continue to cook, while breaking turkey up into small clumps, until the turkey is browned. Add chili powder, cumin, salt, and flour. Stir well. Add drained and rinsed black beans, tomatoes and broth. Stir and continue to cook for 5 minutes, stirring often.
Layer the casserole components, in a large casserole dish (9” x 12” x 3”) in the following order:
1/3 of turkey mixture
½ of the pasta
1/3 of the crushed chips
1/3 of the turkey
½ of the pasta
1/3 of the chips
The remaining 1/3 of the turkey
The remaining 1/3 of the chips
Top with cheese
Bake, covered with foil, at 350°F for 25 minutes, remove foil and bake an additional 5 minutes or until hot.

To make dinner time easier, you can make this dish several hours before dinner and refrigerate. If you do this, bake the casserole, covered, for 40 minutes. Uncover and bake for an additional 5 minutes.
