1 package firm tofu
2 packages boil in bag brown rice
1 tbsp sesame oil
edamame (as much as you'd like)
Chopped fresh mushrooms (as much as you'd like)
2 eggs
fresh grated ginger (as much as you'd like)
fresh chopped garlic (1-2 cloves)
lite soy sauce
Using a large skillet, heat the sesame oil. While sesame oil is heating, cut entire package of tofu into small bit size pieces. Stir fry tofu in oil until browned. While tofu is browning, cook brown rice according to package directions. Once tofu is near done, add mushrooms and cook until done. Pushing mushrooms and tofu to one side of the pan, crack both eggs into pan and scramble until done. Add grated fresh ginger and chopped garlic and cook for another minute. Add packages of cooked brown rice and stir everything together. Add edamame and soy sauce to taste.
